I have a few vegan cinnamon roll recipes on the blog, but I thought it was time to share a real cinnamon roll recipe. And let me tell you - these are some of the best cinnamon rolls (aka cinnamon buns) - much better than the cinnamon cinnamon rolls if I say so myself! They are gooey and soft and very tasty especially when frozen with cream cheese. I'm just dripping thinking about them!

  • active dry yeast - I have used Fleischmann's Original ActiveDry Yeast, but any type of active dry yeast will work! Just make sure the dry yeast works instead of quick yeast.
  • milk - we mix the yeast with warm milk until it dissolves. You want to make sure your milk is warm, but not hot (about 105 ° –115 ° F) otherwise it can kill the yeast! I like to use almond milk, but whole milk and 2% milk will also work.
  • bread flour - I like to use bread flour for a simple, soft texture, but whole-purpose flour will serve as a substitute if that's all you have.
  • granulated sugar - 2 tablespoons just mixed with dough. This helps to make the yeast work. Sugarcane sugar will also work here.
  • salt - to combine all flavors.
  • butter - dough and filling with cinnamon sugar. I used unsalted butter, but salty butter will work too!
  • egg - helps the dough rise. Be sure to use a room temperature egg!
  • brown sugar - we combine this with cinnamon to add cinnamon sugar.
  • Ground cinnamon - can't have cinnamon rolls without a lot of cinnamon!

Mix yeast and milk: Mix yeast in warm milk until melted. Let stand for 10 minutes.


Make the dough: In a drying machine with paddle attachment, add flour, salt and sugar. Combine integration. With a low-speed mixer, add the melted butter and yeast mixture. Increase the speed to medium-low, then mix for 2 minutes until the dough begins to form.


Transfer the attachment to the dough hook and knead the dough into the drying mixture on medium speed for about 5 minutes, or until the dough is smooth. Increase the speed to medium and mix for about 2 minutes. Mixing is done when the dough makes a slap as it hits the side of the bowl. The temperature of the dough should be close to 90 ° F. Your dough should not stick, but if you add more flour, start with 1 tablespoon at a time.


Let the dough rise: Once combined, place the dough in a large greased bowl and cover with plastic wrap. Let the dough rise for 1-2 hours, or up to twice in volume. Time will depend on how warm your house is.

Make the ice: While the cinnamon rolls cool, make the creamy ice cream by adding cheese cream, Greek yogurt, maple syrup and vanilla in a large mixing bowl.
